Can you imagine your favorite comfort food? Whether it’s a steaming bowl of homemade soup from your grandmother or a chewy chocolate candy from your childhood, food evokes a variety of emotions. But the way we experience food also depends on many different factors, such as smells, sounds, textures, colors and memories. On today’s episode, University of Kentucky professor Dan Han introduces us to an emerging field called neurogastronomy, and how this science can help us train our brains to favor healthier, more sustainable foods. Plus, we’ll step into the kitchen for a behind-the-scenes lesson on how to apply neurogastronomy to the Thanksgiving table with Atlanta-based chef Talia Camerino.
